Behind the Bar: New Years Mocktails

The holiday season is drawing to a close, and it’s about time to prepare for the new year. Although New Year’s Eve is often celebrated with champagne, we recommend the tasty ‘mocktails’ below as a non-alcoholic option.
However you choose to celebrate, Cheddar’s wishes you and your family a happy and healthy 2018!

Lady Lavender Mocktail

For the drink
1/4 cup fresh lemon juice
1 1/2 tbsp lavender simple syrup
1/4 tsp grenadine
3 dashes bitters

For the syrup
Combine 1/2 cup water, 1/2 cup sugar, and 1 tbsp dried lavender to a sauce pan. Bring to a boil then turn off the heat. Let mixture cool in the pan and then strain out the lavender.

Directions
Combine above in shaker with ice and shake until cold. Strain into glass and top off with club soda. Garnish with fresh lavender.

Moscow Mule Mocktail

Ingredients
1/2 cup Ginger Beer
3 tbsp fresh lime juice
3 tbsp club soda

Directions
Fill a copper mug 3/4 full of crushed ice. Mix ingredients in mug; stir together. Garnish with lime wedge.

Sangria Mocktail

Ingredients
2 cups boiling water
2 black tea bags (or 2 teaspoons loose-leaf tea in an infuser; decaf tea is fine)
2 cinnamon sticks
1/2 cup sugar
3 cups pomegranate juice
1 cup freshly squeezed orange juice
1 medium orange, sliced into thin rounds
1 medium lemon, sliced into thin rounds
1 medium lime, sliced into thin rounds
1 medium apple, cored and cut into 1/2-inch chunks
3 cups carbonated water

Directions
Begin by pouring 2 cups of boiling water over cinnamon sticks and black tea bags; allow to steep for 5 minutes. Remove black tea bags and stir in 1/2 cup of sugar until it dissolves.
In a large jar or pitcher, combine tea, cinnamon sticks, pomegranate juice, orange juice, orange, lemon, lime and apple. Chill overnight. Just before serving, stir in carbonated water. Serve in glasses over ice.
