New Orleans Pasta — a Perfect Blend of Nice and Spice

You may not be able to make it to The Big Easy for Mardi Gras, but we’ve got the next best thing at Cheddar’s Scratch Kitchen — our Southern-inspired New Orleans Pasta, which is jazzed up with our special jambalaya seasoning.

Jambalaya, a traditional rice dish for which New Orleans is famous, usually contains seafood, sausage and, of course, bold spices. Cooks have spent years mastering this Creole and Cajun specialty, and there are many variations.

We take just as much care with our version of Creole scrumptiousness and it shows — New Orleans Pasta is our fifth most popular menu item. To make the sauce, we sauté pieces of our famous Chicken Tenders with onions, green peppers and spicy, smoked andouille sausage, which is a mainstay of Cajun cuisine. We add our special jambalaya seasoning mix along with a few secret ingredients. You didn’t think we would tell you everything, did you?

We combine this hearty, spicy goodness with penne pasta and garnish it with Parmesan cheese and parsley. For a final flourish, we top it with blackened shrimp. The dish is served with toasted garlic bread for a cooling crunch.

Jambalaya dates to the late 1700s. Similar in some ways to Spanish paella, jambalaya was born of necessity, a tasty but inexpensive way to use local Louisiana ingredients. It grew popular at church events and other large gatherings and became the perfect dish for outdoor cooking in large cast iron pots over hardwood fires.
